Each change of season brings with it new possibilities which are completely taken advantage of by our chef. The ingredients are acquired predominately from local farms here in the Black Forest and Lake Constance.
Especially tasty are our game dishes which have surprised many an American and international guest. Our venison is often acquired through the hunting endeavors of our own Ruediger Schrenk (manager of the Waldeck) and therefore always fresh.
